FATHER’S CURED HICKORY SMOKED BEEF BRISKET JERKY We start out with the finest choice trimmed Beef Brisket and cure with our special mixture of salt,sugar,brown sugar and sodium nitrite and apply to the fresh Brisket ,just like we cure our Country Bacons.After the curing process we smoke the cured brisket in our smoke house for 96 hours.After smoking we slice thin and hand rub each slice with Father’s Southern Cajun Seasoning before drying.The Southern Cajun Seasoning is absorbed into the beef brisket strips during the drying process. The results is an outstanding Beef Jerky our Southern Cajun Seasoning is not HOT HOT but it adds a sizzling robust flavor.Made on our farm the old Country way! Country Hams ,Bacon,Smoked Sausage and other cured meats have been cured on our family farm since 1840.
